Biko: A Filipino Delicacy
What is Biko?
Biko is a traditional Filipino rice cake made from glutinous rice, coconut milk, and brown sugar. It is often topped with caramelized coconut and is a popular dessert during the Christmas season.
Ingredients
To make biko, you will need the following ingredients:
- 1 cup glutinous rice
- 1 can coconut milk
- 1/2 cup brown sugar
- 1/4 cup caramelized coconut
Instructions
To make biko, follow these instructions:
- Rinse the glutinous rice and soak it in water for at least 4 hours.
- Drain the rice and place it in a pot with the coconut milk and brown sugar.
- Bring to a boil, then reduce heat to low and simmer for 30 minutes, or until the rice is cooked through.
- Spread the rice mixture into a greased 9x13 inch baking dish.
- Top with the caramelized coconut.
- Bake at 350 degrees Fahrenheit for 15 minutes, or until the top is golden brown.
Serving
Biko can be served warm or cold. It is often served with a side of fruit or ice cream.
